Syn Free Tatziki
- 1 large 500g tub of total0% Greek yoghurt
- 1 Cucumber
- 2-3 cloves of garlic pureed
- juice of one lemon
- 1 – 2 teaspoons of Mint finely chopped (or more if you like it minty)
Peel the cucumber and scrape out the seeds (throw the seeds). Grate the cucumber into a sieve or colander and sprinkle with salt (leave in sink or over a bowl) – this will draw a lot of the water out of the Cucumber.
Mix pureed garlic lemon juice and yoghurt in a bowl
Squeeze water from grated cucumber and add to yoghurt mix and stir, then mix in the mint.
